As a complementary ingredient, pectin with starch can effectively combine the technological advantages of both ingredients and generate additional benefits in baking stable fruit fillings, dairy products or gummy confectionery. In yoghurt fruit preparations, this positive effect can also be achieved with pectin in combination with other hydrocolloids such as LBG or guar.
