The Protein Brewery is a pioneering food-tech company based in Breda, the Netherlands, committed to reshaping the future of food through sustainable, nutritious, and animal-free protein ingredients. Founded in 2020 as a spin-off from BioscienZ, the company harnesses advanced microbial fermentation technologies to produce Fermotein®, its flagship ingredient.

Fermotein® is a revolutionary whole-food ingredient developed to address one of the most pressing global challenges: how to feed a growing population both sustainably and nutritiously. Traditional protein sources, whether animal-based or plant-based, often come with significant environmental costs and may lack complete nutrition. Fermotein® offers a nutrient-dense, low-footprint alternative made from mycelium, the root structure of fungi. It delivers complete protein (PDCAAS 1), fiber, essential vitamins and minerals, with virtually no fat, carbs, or sugar. Its neutral taste and smell make it highly versatile across food categories such as bakery, snacks, dairy alternatives, and functional nutrition.

What truly sets Fermotein® apart is its unique composition. It contains high levels of spermidine, a compound linked to cellular health and longevity, up to 6–7 times more than wheat germ. This opens up exciting possibilities for products targeting healthy aging, including longevity bars and functional foods.

From an innovation perspective, Fermotein® is the result of intensive strain selection and production optimization. This enables a scalable, low-cost production process with minimal processing. It’s not just a protein, it’s a platform for better nutrition.

On the sustainability front, Fermotein® production uses only a fraction of the water and land required for animal or plant proteins, while delivering a dramatically lower carbon and water footprint. It’s a natural, minimally processed ingredient that aligns with the future of food: nutritious, clean, and climate-conscious. To support its mission, The Protein Brewery operates a state-of-the-art production facility in Breda, which is certified FSCC22000Koshergluten-free, and non-GMO.
