Clara Foods rebrands as the EVERY Company and launches animal-free egg

Fermentation startup Clara Foods announced it is rebranding as the EVERY Company at the same time that it is launching the world’s first animal-free, nature-equivalent egg protein — ClearEgg.

Its new ClearEgg egg white protein is made from one of the dozens of proteins that comprise a natural egg white: s-albumen. According to the company, this particular protein is tasteless, has no odor, it is clear and is highly soluble, making it a perfect application for beverages.

EVERY Company has already partnered with BioBrew, an AB InBEV backed ZX Ventures brewery, to brew its animal-free protein using precision fermentation at scale. At a webinar hosted by EVERY, Food Dive reported that the company demoed the addition of the ClearEgg protein powder to a pilsner to demonstrate the qualities of its new fermented protein. Already 40 companies that produce a variety of beverages from carbonated drinks to protein shakes to juice are have been given samples of the ClearEgg ingredient for experimentation.

Attempting to crack the animal-free egg market has been no small undertaking for the company formerly known as Clara Foods. When the startup was founded by Arturo Elizondo and David Anchel the goal was to recreate egg white proteins through fermentation, and for seven years the team has been working to deliver a product that can do so.

However, while egg white protein has always been a goal, the change of the company’s name marks a transition in focus. Industry publication The Spoon reported that EVERY eventually wants to diversify outside of just chicken eggs and also create a platform that supports an entirely different range of fermented products. Food Dive confirms this report in an interview with Elizondo who said that the “[company’s] scope is broadening to be seen more as a protein powerhouse.”

Already, the startup has launched an animal-free pepsin that is distributed through Ingredion. ClearEgg will also be distributed by Ingredion.

Since EVERY is an ingredients provider rather than a manufacturer, the company designed its new protein for more than just beverages. ClearEgg can be used in other applications such as snacks, bakery items and nutrition bars where protein is required since its new protein ingredient is stable at different temperatures. In the release, EVERY said it will launch its first egg protein as a co-branded ingredient with its first retail customer later this year.
